I am 1/2 Danish and the other half is Scottish and Welsh. I can trace my roots all the way back to Charlemagne, January 28, 814. I have traveled a lot over the years and have seen some wonderful architecture we will never see in the USA. I am blessed and love to travel. My husband has been with me on every trip but one. We have 2 of our grandsons, so far, with us on different trips when they were about 16. We stayed gone a month each time and loved every minute!

 I was in Austria and Germany in 1997 with The Lone Star Chorus, a women's Barbershop chorus of about 60 women. We sang in the Austrian Performing Arts celebration and visited many well known tourists places.

Then we went to Hawaii and loved Maui. We hope to return someday soon. We went to Alaska on a Cruise with well known Christian writer, Chuck Swindoll. I love a Cruise ship and you can eat all day and night and be certain, we did. But that is part of my story because I did not choose wisely, even then, and put myself at risk for several diseases. As you can see, we both needed to lose weight and become healthier and this was 2008.



We went to Mexico seven times with a group from our church. It was mission trips and I served as a chair side assistant for my dentist while we were there.

We took our first grandson, Christian, to Madrid, Spain and traveled by train to Valencia and got to eat the sweetest oranges you will ever taste every day. We stayed in a friend's home and witnessed their yearly celebration called Fallas for 10 days. It was loud (fireworks and music), colorful ( the Fallas statues) and delicious (the Paella). Then we rode the train to Paris, France at night. That was quite an experience!


We were guests with our host, Henny Cote, to the bull fight. At least we can say we have been to one. The Matador was dressed very handsomely and the people are very proud of this tradition.

Christian bought a sword for a souvenir  but to our dismay, was not allowed to bring it back to the states. The pictures will be the memories .

We stayed in Paris for 7 days and had a wonderful time visiting museums and other tourist attractions.

My grandparents came over from Copenhagen, Denmark in 1903 or 1907. I cannot tell from his passport, but I have my grandfather's passport in my possession, a real treasure. I want to learn how to post pictures in my blog as I share my story. He lived with my grandmother in Webster Groves, Missouri when my father was born in 1919, Donnell Christian Jensen.

My father met my mother on a blind date in 1945 and they married the 7th time they ever laid eyes on each other, on June 22, 1945. I was born on March 18, 1946. I got a baby brother in December 1950 before I turned 5. I grew up in a wonderful Christian home and learned to cook, clean house and have fun . We moved a few times while I was growing up because my dad was a Baptist preacher. It was while I lived in Shreveport, LA that I met my husband to be. We were at church camp at Latham Springs.  I was 13 and he was 17. We married 5 years later after I graduated from High School.

My Story

I am brand new and have loved reading other's blogs but have never created my own. A lot of my friends have encouraged me to start one and so here I am. Funny thing-I only have a few minutes to write at this time and will add more as I go along. 

This blog will be my life story and how I have survived cancer, other surgeries and completely reversed Type II Diabetes and got off insulin in 10 days! Yes, after coming home from the hospital with Blood Sugar nearing 700, they put me on Metformin twice a day and Levimer insulin 4 times a day. I said "No way am I going to do that to my body" so I decided to try eliminating certain foods, learning more about nutrition, health and wellness and how to reverse disease. 

I was so successful, my doctor refers some of his patients to me as a source of information, encouragement and guidance. I am humbled by this and try very hard to help anyone who is interested in learning how I did it and how I have stayed off OTC and Pres. medicine for over 5 years!

I will share meal ideas, snacks, recipes, pictures and other helps as we go on this journey together. Welcome to my blog and share with others so they can find me and we can travel on this journey together!

Did you know that there are a lot of foods that are highly acidic and cause over 100 diseases? I was eating all of them and enjoyed the taste and preparation every day. But I wasn't aware that I was slowly killing my body, one cell at a time. I was also making my filtering organs very sluggish and sick day by day. 

I think the first time I realized this was when it took me 7 years to get pregnant with our second child. But I did not know what I do now and would not have changed my behavior because I was young and in denial. I got pregnant with our first child the next month after stopping birth control and we were so happy. He came within 3 hours after labor began and I only had hard labor for about 30 minutes. He weighed 9 lb. 9 oz. and was healthy-but he should not have weighed that much! I wish I had known to not gain as much weight-50 pounds- and eaten less carbohydrates the 3rd trimester. But he is 48 now and a joy to us!

I had Endometriosis and difficulty getting pregnant for another baby. I also had a tipped uterus and that made it even more difficult. But miracles do happen and with much prayer we had a baby girl 7 years later in 1974! She came in less than 3 hours also and weighed 9 lbs 7oz. She is now 41 and the mother of our 7 grand children, soon to be 8! 

I had to have a hysterectomy in 1988 and didn't know there were alternatives to this drastic choice. I also took Premarin, at the advice of my doctor and in 1996 discovered I had breast cancer! What a coincidence! I share with everyone, do not take synthetic drugs if at all possible. They have side effects and can be avoided many times. I refused all drugs after 6 treatments of chemo and I am a 20 year survivor!

Please educate yourself when a problem arises. There are alternatives with nutrition, exercise, weight loss and essential oils. I prefer the certified pure ones and will give my email if you have questions.

Let me share a chart I like that will begin to educate you about food. 


When I was diagnosed with Type II Diabetes I was in the hospital with blood sugar rising close to 700! I could have been in a coma and died. I was thirsty and had cotton mouth, was sleeping a lot and drinking water every 30 minutes. 

I was eating the foods brought to me and noticing they were not healthy and low carbohydrates. I asked my doctor to let me order my own food. That is when my BS began coming down to the upper 200's. I said no canned fruit, no bread, pasta, potatoes or rice. No juice or diet foods. Just grilled chicken or fish, steamed vegetables and a fresh, raw salad with a lot of greens. Raw fruit and water-no coffee or tea. I got to go home on the 5th day. But he had me on Metformin, 500mg twice a day and insulin, Levimer 4 times a day. I began by completely eliminating these foods from my daily habits.

Red meat
White foods-pasta, rice, bread and potatoes, flour, processed foods, etc.
SUGAR of any kind
Sodas and never diet soda
Coffee and tea with caffeine and acid

In 10 days my BS was between 75-120 every time I tested, which was 4 times a day! I was off insulin, never to need it again and that has been 5 years! I also lost 85 pounds in less than 9 months and weaned myself off Metformin in 1 year! I am not on any medication for Diabetes and got off 7 other Pres. drugs within 1 year. At present time, I only take a small Blood Pressure medication and I am working at getting off of that also!
